A little thread drift here... I'm fixing up an offset smoker I bought for $40. It's not one of the lightweight ones suitable for charcoal only. Now to find some seasoned maple. (My favorite cooking wood)
I had an offset. Too cool for me- I never got it right. Temp was always too low or high, not enough smoke… I like my pellet smoker for convenience, but a real offset gives amazing flavor.

It was real good. I’m not a good cook, but when you can set the temp and let the grill do the rest, it turns out very tasty.

Shelf finished with spar urethane and installed. For now, bought charcoal and a bag of cherry pellets, experimented with charcoal and no good. Only achieved 205° so I'll have to wait until I get some wood. One guy sells seasoned hardwood but he wants $200 for 1/4 cord of cherry, apple, maple etc. I'd never use that much and hate to spend that much but might have to do it. Maybe I'll buy a couple cubic feet of chunks for $32+ for 1 cube.

Want to try the pineapple injection thing, it’s intriguing It didn’t taste exactly pineapple-y but it was sweet and tender. Everyone said do it again the same way.
