Dry brined chicken, roast potatoes (avocado oil/cumin/smoked paprika/garlic powder and salt), butternut squash with butter, brown sugar, and cinnamon. All cooked in a small convection oven.

Looks great. Tomorrow I am cutting (cubing) a bunch of chicken breasts and "woking" them with assorted seasonings, spices, Swerve brown sugar, soy, sesame, etc. Add it with some broccoli florets, mushrooms, whatever.

Made the gumbo and it was ok but not spectacular. Though I love Conecuh sausages, they just didn't work. I browned well but evidently not enough. The next day I drained the liquid, tossed the sausage and kept the shrimp served over rice. Made a quasi - jambalaya. Perfect.

Conecuh sausage...that's a new one for me, had to look it up.
Tonight’s Factor was the Pot Roast Shredded Beef and Mash:

I know the carton is upside down. I didn’t notice until after I reviewed the pics.

It was pretty good. The beef was properly cooked, tender and tasty. The veggies were also properly cooked, tender yet slightly crunchy. The mash was acceptable. I suspect it was powdered potatoes. The best thing about this Factor meal? It wasn’t chicken breast! I added a little zero sugar BBQ sauce to the beef and some butter to the veggies. I’m going to top it off with a protein shake shortly.

Tonight’s Factor: Creamy Garlic Chicken Thighs & Roasted Mushrooms

I much prefer chicken thighs over chicken breast. The shredded thigh was good, the mash okay and the beans well cooked with a bit of crunch. I did not taste any garlic in anything. I added a splash of Teriyaki sauce to the chicken and butter to the beans. I marked this one a YES.

Put some beans and hocks in the crock pot this morning, grabbed a Ziploc with turnip greens from the freezer.
Meanwhile, I cooked some grits and mixed them with extra sharp cheddar, evaporated milk, sausage and eggs etc. Put that in a baking pan to bake in the morning. Saw that recipe on the box of grits, it sounded good. Normally I don't eat grits but it suddenly appeals to me.

I haven't had beans, ham hocks and turnip greens since my Mama got called to heaven in the mid 1990s.

Tonight’s Factor meal: No-Pasta Beef Bolognese with Garlic Roasted Zucchini

The Beef Bolognese was very tasty. I did add a few drops of Franks Red Hot. The Zucchini was properly cooked and also tasty. I did add butter which I do to most of the veggies in these meals. Still didn’t taste any garlic. I marked this one a YES!
