I made stuffed bell peppers last night. The usual burger and rice but just because I had them in the fridge I chopped some mushrooms and added those. The only cheese I had in the fridge was romano so I grated that for a topping (not the best choice).
Seven hours later and I'm still not hungry, boy was that filling ! I've 3 more in the fridge so that'll be dinner for Wednesday, Thursday, and Friday.
