Sounds good. How did you do the casserole?
If you mean the funeral potatoes, thawed cubed hash browns, cheese, condensed cream of chicken soup and sour cream in the oven. I topped it with a can of dried fried onions.

Won't be ready for a few weeks, but I'm trying something different for this batch of sauerkraut.
I mixed red and green cabbage and added a pound or so of grated beets. Hopefully it'll be good.

Pork loin seasoned with sage-garlic salt-:paprika- thyme- onion powder. Filled the Dutch oven with carrots and put it in the oven. Boiled some potatoes and made gravy after removing the carrots and pork.
Turned out good, leftovers for the next 3 days.

Hoppin John. Black eyed peas, rice, ham hocks, etc. . Thawed some turnip greens but didn't get around to eating them tonight. Enough leftovers for 3 days or so, I'll probably make some cornbread tomorrow.

That takes me back! My Mama made that supper for us many times. I haven't had it since she went to Heaven.

When my girls were 4-5-6 etc. years old they would jump up and down clapping their hands when I made it. "HOPPIN JOHN! HOPPIN JOHN!"
