Good morning! I tried dry brining a chicken yesterday and it turned out great. I've never heard of that before so I decided to give it a try. The idea of salt first drawing the moisture out and then putting it back in and locking it there sounds counter-intuitive but it works.
Good morning y’all. It’s my first day of summer break. I’m being lazy today- not starting on my big projects until tomorrow- maybe. The middle of August and back to school will be here soon enough, but today is a day off.

is dry brine just packing it in salt??

Not really packing, just rubbing with salt and seasonings and letting it sit uncovered in fridge. Be sure to get some rub under the skin.

Not really packing, just rubbing with salt and seasonings and letting it sit uncovered in fridge. Be sure to get some rub under the skin.

Good morning! I scared the crap out of myself this morning. Got up and stumbled to the stove to heat water for coffee. Lit the burner and whoof! I managed to turn two burners on. In my half asleep mind my first thought was "Oh no, I left the gas on all night!" Ok, if that were the case, and there was enough oxygen to light the stove it would've blown the place to smithereens. Since I have no sense of smell gas makes me nervous. Also, if that were the case, I wouldn't have woke up. Funny the thoughts that I can have when I'm not fully awake.

We had a serious storm come through here last night. The winds were so high I was afraid a tornado was on it's way. Thunder, lightening and rain with a little hail mixed in. Power went out for about an hour. We used our head lamps to get around and read until the lights came back on.
